Weekend Post- January 2nd-4th

I have been trying to write this post for hour now, but the Bachelor has been quite the distraction. The first episode has already beaten the entire season with Juan Pablo... just sayin'.

This past weekend topped off our holiday vacation and we spent it with great friends. 

Mike went to the Alamo Bowl Friday night with his bestie. They ended up getting front row tickets that gave them access to the field. Mike was in heaven and he even got to see Eric Stonestreet from Modern Family. #celebsiting

Two of our friends said "I do" and in Abilene and we almost thought we wouldn't make it. The weather the night before was nuts and froze all of the streets. We made a game time decision and drove up Saturday morning. I am so happy we did because it was beautiful.  Side note: we spent the car ride up there listening to Serial and I am now hooked!

Mike wanted to get out the door first thing Sunday to get home for the Cowboys game. I knew that wasn't going to happen because we were staying with his other BFF and it was all comfy. We spent the morning chatting and sadly watching the stories on Stuart Scott. 

On our way home I did a little research on coffee and different things to add (whole30 or paleo) to black coffee. This search led me to the Bulletproof Coffee website and I got all kinds of inspired.
This morning I made butter coffee and LOVED it. It is extremely simple and I don't know if it was mental or what, but I felt energized all day!


The ingredients were:
6-8 oz organic coffee
1-2 tbsp coconut butter
1-2 tbsp grass-fed butter

I made coffee in the french press and while that soaked I melted my coconut oil and added that to a blender. I then added the butter and coffee and blended for about 20 seconds. That's it! It was so simple and smooth. I'm actually really looking forward to making this again tomorrow morning. 

The benefits of adding butter to your coffee are:
  • Your body burns fat faster
  • Gives you up to 6 hours of energy
  • 2 tbsp in your coffee is all you need to make this a meal replacement
  • It's a good source of vitamins
  • grass-fed butter has natural fats that help regulate cholesterol
