Weekend Post- Jan 16th-18th

Our weekend was quite relaxing. We had some good couch time watching football and watching What If and This Is Where I Leave You. I guess without knowing we were on an Adam Driver kick. Also, GO SEAHAWKS! Mike and I have loved the city of Seattle ever since we visited when we were engaged. We also love Russell Wilson and I cried with him last night as a group of the team prayed after the game. That is what it is about.

Friday night was spent watching Boyhood. It is a longer movie but had our attention the whole time. I loved how they filmed it over the years and we were able to watch the characters grow up.What a great idea, Richard Linklater!

My Saturday was filled with girl time:) My friend Rachel and I had a coffee date at Local and then headed to the Botanical Gardens to meet up with our friend, Nicole. It was dog day at the gardens and it was so cute seeing all of the dogs become friends. After that, Rachel and I headed to my sister-in-laws for a Jamberry party! We learned how to apply the "nail art" and got to pick out different patterns to buy. It is definitely easier than it looks and they will last up to 2 weeks! I am sold.



After cleaning house Sunday morning, Mike and I headed to my cousin's baby shower. We went to their gender reveal party a few months back and it seems like just yesterday they announced their pregnancy. Their baby Brody is due at the end of February and I can't wait to meet the little hunk!

The last thing I wanted to do Sunday night was cook dinner. I decided I would let a soup cook itself on the stove, so I took all that was going bad and threw it in a pot. I have been doing that a lot lately and it turns out to be delicious. This soup consisted of chicken stock, beef stock, cabbage, butternut squash, zucchini, bell pepper and lots of herbs. I threw in some ground lamb last minute and it made the dish. It's an easy meal that takes no time and saves you from throwing away veggies. 


To touch on Whole30, this round has been going really well! My friend and I are doing 60 days and are almost half way there! Three of my co-workers, my dad and step-mom, and two friends are doing the plan as well and I could not be more proud of them. It has been fun having weekly "support" meetings to talk about the changes we have had and any food struggles from that week. My dad has been sick this past week and lost 7 pounds just from eating clean. It is incredible to watch your body change and thank you for giving it good, clean food. 

There are definitely times when I don't want to cook and prepare meals, but I have stocked my kitchen full of good grab-and-go meals. Aidell's Chicken and Apple sausage has been a great one for me as well as tuna cans. As long as you don't look at it like a chore, you will succeed!
