Weekend Post- Sept 26-28

I sit here writing with the smell of chicken looming around our apartment. If there is one smell I really dislike it is that of yard bird. I'm not sure why, but EW (said like Jimmy Fallon's Ew skit).

On another note, our weekend has been fun. I feel like I say that every weekend post and if you have caught on to that I am sorry. I guess if it's a busy one it's fun and if it's slow it's fun. Mike and I are working on finding the happy medium between running ourselves thin and not wasting the day. It is definitely a process, but this weekend was a good start. 

In my eyes our weekend, or change of pace, started on Thursday night. My friends and I went to another spin class at JoyRide and then went to The Cove after for dinner. Our loved ones met up with us after spin and we all relaxed enjoying good company, food, and live music.

At my office on Friday we had a tailgate party where everyone one brought in side dishes and hung out together. I have to say, I work at a pretty awesome place. 

Friday night Mike and I watched Dateline where I got freaked out and decided to go to bed. I have never been one for those types of shows. They reel me in and then I can't stop thinking about them for weeks. 

Saturday, Mike went and hit up the gym while I slept in. Me sleeping in was part of the whole "you can still sleep in and not waste the day" attempt. I slept until 8:30 and felt like it was noon. Works for me. 

My sweet, non-coffee drinking husband stopped and got me a coffee on his way home. It's the little things, y'all. Once I got up and moving, my friend Rachel accompanied me to the grocery store where I bought the ingredient's for PalOMG's Buffalo Chicken Sweet Potato Skins and Primal Palate's Chocolate Chip cookies. Mike and I were headed over to friends house that night to eat and watch college football. I was excited to try out new recipes and even happier to hang out with Rach for a bit. 

The Sweet Potato Skins took FOREVER, but that's just because it takes a while in general to bake potatoes. The recipe has cheese on there as an option, but I didn't make them with it.


The cookies were awesome and really easy to make. It's amazing to me that I can actually bake something now and not burn it to a crisp. I am not sure if that's because I have become a better baker or if it's because I am actually reading the recipe. Baking is such a science. {Insert picture of cookie here. Football night was fun and really relaxing. We topped of the last game with a cup of coffee and the cookies. Definitely the comfy feeling I was needing. I am SO ready for fall. But just fall... no winter.

Sunday started off with a run at our apartment gym. Mike and I have another 5k next Sunday, so I have been making sure to do some sort of cardio every day. We couldn't find the remote to change the channel, so we were stuck watching the ProActive info-mercial. First off, they must have paid Adam Levine a crap-ton to do that commercial. Second, Mike and I now know all of the benefits of ProActive, so if you are feeling helpless in the face wash, let us know, ProActive can help! 

We hurried back to our apartment, showered, ate and headed to church. The message was on truth and how Jesus is truth. We read over John and 1 John- "Jesus is the truth and the way and the life."
We ran into our friends after for a quick catch up and then headed to grab an almond milk latte at one on our favorite places.


From there we headed to Mike's mom's house where they were packing up and getting ready to move to a new home. This house is where so many wonderful memories were shared and fun family parties were had. It is where Mike and I shared our first holidays together. Now, we will make new ones in there beautiful new home. During the packing, Mike found his old Play Mobile toys. It was the cutest thing seeing him find pieces that he used to love. His mom is keeping all of their old toys for our kids one day. How special:)

On our way we stopped off at the book store and I picked up Love-ology by John Mark Comer. I saw this book on Instagram and was instantly on a hunt to find it. I can't wait to start it.


Sunday ended with Sunday Night Football and Scandal. I missed the premire last week due to our spin class and waited until Sunday night to indulge. Side note, as I type Mike just called out and asked, "what is this crap?!". I turn to look at the TV to see that "this crap" is Zac Efron in High School Musical. Oh Michael, if you only knew how much "that crap" meant to me back in the day. Love me some Zac.

Four Years

I spent last night and most of today in Houston for a work seminar. My night was spent sprawled out on a king sized bed watching TLC and Food Network. I think I was a little too excited about the "free" cable. Since we do not have cable at home, Mike and I always tear it up when we go to other people's homes. Is that sad?? We have a hugh crush on HGTV and ESPN.

It was a lot easier to eat on the road then I thought it would be. I had some snacks prepared (fruit, Larabars, sweet potatos) and restaurants are starting to include a larger gluten free menu and provide alternatives. 

Breakfast was an egg white omelet with mushrooms, onion, chicken sausage, and bell peppers. They also had almond milk available to use in my coffee!



Lunch was a stop at FreeBirds. I had the Freedom salad with no dressing. Added lettuce, chicken, tomatoes, guac and grilled veggies. It was absolutely delicious.

My morning was spent in a Google seminar learning the stats on digital marketing and basically if you or your client isn't doing it then you're WAY behind. Good thing we do and now I have even more info to present come my next meeting!


While I was away, Mike played in our first work volleyball game. My office set up and team and Mike was able to join. I was super jealous that he was playing, but it was cute to talk to him afterwards. I have huge FOMO (fear of missing out), so I can't wait to play next week:) I love that he was able to meet my awesome co-workers and talk about how much fun they had. I kinda just shoved him in the water and he floated. 

I got home a little earlier than I expected, so I headed for the kitchen. My cookbooks have been calling my name, so I made:
  • No-cook Chocolate Pudding  (Against All Grain)
  • White Peach Muffins (Mike's breakfast- The Paleo Kitchen)
  • Fluffy Peach Pancakes (Mike's dinner for when he gets home- The Paleo Kitchen)


These meals are really simple and if any one is interested I can post the recipes in another post:) 

Today is our 4 year anniversary. I know our wedding anniversary now trumps this one, but these four years have flown. God has blessed me with my other half and earthly rock. Together we have no fear and love harder each day.

Quick Post From Our Weekend

I sit here writing this eating frozen bananas topped with almond butter AND watching The Voice! Woohoo it's back!

Looking back on the weekend it seems like all I did was grocery shop (2 times in one day) and cook. Not complaining by any means! I seriously can't wait until Mike and I go house shopping so I can find (renovate if needed) my dream kitchen. I highly doubt I will find it right away, but I am looking so forward to it now that I have been cooking in our apartment kitchen. We have ZERO natural light in our kitchen now. Not ok.

Whole30 has made me crave new dishes and has given me the patience to plan and cook what my body needs. It is crazy looking back on what I was eating before and how I felt. I never thought I would be able to figure out the combo between what to eat, my workouts and feeling great. I can honestly say that I have been working out 5 times a week, but nothing like what I was doing before Whole30. But you know what the crazy thing is?? I feel the best I have yet in my adult years. It's so true when they say abs are made in the kitchen. Not that I have abs or anything. Not yet, at least!

My step-mom asked me yesterday if I had weighed myself recently. It took me a second to think about the last time I had and I couldn't remember. I used to let the scale determine my mood and day and I was so tired of that. I don't plan on weighing myself anytime soon, but I do measure my hips weekly. That alone keeps me going because it's like they are disappearing without me even noticing.

Long Week/Great Week

Last week was a crazy one, but a great one at that. It started off on Tuesday with a morning coffee date with my lady friends. We started grabbing coffee before work and it is seriously needed. I look forward to it every week:) And this week I ran into my Brother-in-law. Winning.


Last Tuesday our conversation led us to planning a trip to NOLA. Um.... I'm so excited!!! None of us have ever been and we all are a good mix of site seeing, foodies and night life. This will be amazing. 

After work on Tuesday we all took a spin class at JoyRide. I had never been there, but boy do I want to go back! The energy was amazing and the company was even better. The "easiest" things turned out to burn the most! Mike and I did a spin class at our gym, but this one was so different! The instructor was awesome and had me sweating through my clothes! I highly recommend a spin class for a great workout and if you're in the San Antonio area go check out JoyRide! P.S. they have really cute shirts and water bottles.




Two other things that made my week great were these awesome finds. We went to Trader Joe's and found these two ingredient bars. They are great for a throw-in-the-purse snack! There are about 4 flavors to choose from, too! The other find was a Coconut Mango candle- 1/2 my favorite flavor and 1/2 Mike's. Pretty awesome. 1) It was in the sale section at Anthro...does it get any better?! 2) It makes our apartment smell amazing. Hunt it down if there is an Anthro near you:)



To top the week off, we had an agency retreat at Main Event. Our office was divided into different bowling teams at the beginning of the week, which started a train of trash-talk emails. All in fun, of course. (Side note, I knew I wouldn't be able to eat the food graciously provided, so I had to prepare my meal ahead of time and bring it. Preparing takes a little time and planning, but it is totally do able if you want it enough.) 

The retreat was great bonding and got our competitive juices flowing. I love my job:)

Our Currents

Currently we are loving a lot of things.. whats new? I have new cravings all the time, which typically get started on one thing which leads me to another and then another...

1) I have never really been one to always have my makeup done. Mainly because I am a "slap on some mascara and go" type of gal, but then also because when I do want to do my make up it looks like someone punched me in the eye. So, I tend to stick with the mascara to not freak people out. BUT the other day I stumbled upon this beauty and it seems like my makeup fears have been answered. The Beauty Department is perfect for the ladies like myself. They give great pointers on different beauty looks and how to achieve them. They also have great hair tutorials which is yet another dept. I lack in. My hair is board straight... so I tested some on my sister.




2) Instagram is basically my daily daydream. When I have a moment to pause real quick I hop on there to see what my inspirations are up to. Mike, yet again, came in for the win last week when he told me to check out Flower Girl NYC. I have been really into flower arrangements since helping my step-mom with my cousin's wedding last weekend. Basically, I can't stop finding people on Instagram who create these beautiful displays out of nature. So, Flower Girl NYC does just that and I am obsessed. I'm half tempted to fly to NYC just to take on of their flower classes. Anyone down??

3) Mike and I have had the same rinky-dink TV stand since he lived with his old roommate. We found it on sale falling apart and put our trust in Gorilla Glue to keep it together. After too many years of having this thing, we finally decided to have our insanely talented friend make us an entertainment piece. Now all we need to do is update all the rest of our furniture to match:)

4) Another obsession is the cookbook section at Costco. First off, the prices are amazing. Second, they have such a wide variety. Lastly, I found the cookbook I have been wanting for a while! So, if you're wanting to get really good cookbooks for a great price I recommend making a trip to Costco!

5) Lastly, have you seen the Gone Girl movie trailer? Last week I finished the book and have been dissecting it with my co-workers. We are all going to see the movie when it comes out, but I am so curious how they are going to translate some part of the book to the big screen. And will it have the same ending? Either way I can't wait!

Whole30 Meals This Far

So far the Whole30 meal plan has been working out really well! It has definitely taken a lot of prep time, but in the long run my body is feeling so much healthier. I haven't had that gross, overly full feeling in 14 days now and I have to admit I do not miss it at all.

I have found that I like to cook my meals the night before instead of all at once for the whole week (unless it is chicken and that all gets cooked on Sunday by the Mr). I don't know yet if that is because I seriously enjoy my time in the kitchen or if that is because I like it hot, right then and there- no microwave. Also, if we do go out to eat I have made sure to ask the waiter how the chicken/fish/beef is prepared and what all goes into it. That can make or break that meal, so make sure to ask those questions if you are trying this!

Either way, I am seriously loving this new life style. I learn something new that I can eat everyday and am stating to get more creative, which is something that I thought I would never be good at.

Here are some of my main meals:

BREAKFAST:

{coffee with almond milk & apple and strawberries with TJs almond butter (no added sugar)}

*Other meals not posted are hard boiled eggs, sweet potatoes and turkey bacon.

LUNCH:
{meatloaf w/ homemade BBQ sauce- lunch & dinner}

{tuna in water with homemade mayo & apples w/ sweet potato}

{BBQ date with the coworkers (sausage & brisket) **I did NOT eat those rolls or sauce**}

*Other lunch meals not pictured have been grilled chicken breast, grilled fish and veggies.* 

DINNER:
{chicken sausage from TJs (no added sugars) & salad w/homemade avocado dressing}

{sweet potatoes, egg, turkey bacon (no added sugar)}

{sweet potato hash- I eat this ALL the time... my go-to meal}

*Other dinner meals have been salmon, grilled chicken breast & turkey sausage and spaghetti squash.*

SNACKS:

I am excited to see what is to come as far as transformations. To date I have lost over an inch in my hips and that alone keeps me going. My hips have always been my "trouble" area, so to see them shrinking before my eyes is pretty cool. Knowing that it is happening mainly because of what I'm eating is pretty crazy to think about. So... why haven't I started this sooner?! All I know is how I feel currently and that is fan-freakin'-tastic. Bring on this new lifestyle!!
